 1. Chicken Curry    







 
Ingredients:
  • 1 lb chicken thighs or drumsticks (skinless, bone-in or boneless)
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1 tbsp garam masala
  • 1 tsp turmeric powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp red chili powder (adjust to taste)
  • 1 (15 oz) can tomato sauce
  • 1 cup plain yogurt
  • 1/2 cup water
  • Salt and pepper to taste
  • Fresh cilantro for garnish
Instructions:
1. Marinate the Chicken: Combine chicken with half the garam masala, turmeric, cumin, and coriander. Let it marinate for at least 30 minutes.
2. Brown the Chicken: Heat oil in a large skillet or Dutch oven over medium heat. Brown the chicken on all sides, then set aside.
3. Sauté Aromatics: In the same skillet, cook the onion until softened. Add garlic and ginger, cooking until fragrant.
4. Add Spices: Stir in the remaining spices and cook for 1-2 minutes
5. Incorporate Wet Ingredients: Add tomato sauce, yogurt, and water. Simmer for 10 minutes.
6. Cook the Chicken: Return the chicken to the skillet, reduce heat, and simmer for 20-30 minutes until cooked through.
7. Adjust Seasoning: Taste and adjust with salt and pepper.
8. Garnish and Serve: Sprinkle with fresh cilantro and serve with rice or naan.
