Recipes: Fish

1. Basic Poaching Liquid for Fish
Ingredients:
  1. 4 cups (1 liter) water or fish stock (for more flavor)
  2. 1 cup dry white wine (like Sauvignon Blanc or Pinot Grigio)
  3. 1 small onion, thinly sliced
  4. 1 small carrot, thinly sliced (optional, adds subtle sweetness)
  5. 1 celery stalk, chopped (optional)
  6. 2-3 cloves garlic, smashed
  7. 1 bay leaf
  8. A few sprigs of fresh herbs (like parsley, thyme, dill, or tarragon)
  9. 6-8 black peppercorns 胡椒粒
  10. 1-2 tsp salt (adjust depending on whether you're using stock or not)
  11. Lemon slices or a splash of lemon juice
Instructions:
  1. Combine all ingredients in a large, deep skillet or saucepan.
  2. Bring to a gentle simmer over medium heat. Don't boil-you want a mellow heat.
  3. Simmer for 10-15 minutes to infuse the flavors.
  4. Lower heat to barely bubbling, then add your fish fillets.
  5. Poach gently for about 5-8 minutes, depending on thickness, until the fish is opaque and flakes easily.
