Recipes : Soup

1.Classic Tomato Bisque  黄褐色浓汤
Ingredients:
  1. 2 tbsp olive oil or butter
  2. 1 medium onion, diced
  3. 2-3 cloves garlic, minced
  4. 1 (28 oz) can of crushed tomatoes (or 6-8 fresh ripe tomatoes, chopped)
  5. 1 tbsp tomato paste (optional, for depth)
  6. 2 cups vegetable broth (or chicken broth)
  7. 1 tsp sugar (to balance acidity)
  8. 1 tsp salt, to taste
  9. 1⁄2 tsp black pepper
  10. 1⁄4 tsp red pepper flakes (optional, for heat)
  11. 1⁄2 tsp dried basil (or 1 tbsp fresh)
  12. 1⁄2 cup heavy cream (or half-and-half, or coconut cream for dairy-free)
  13. Fresh basil or parsley, for garnish
  14. Croutons 烤面包丁 or grilled cheese on the side (optional but highly recommended)
Instructions:
1. Sauté Aromatics:
In a large pot, heat olive oil over medium heat. Add diced onion and cook until soft (about 5 minutes). Add garlic and cook for another minute.
2. Add Tomatoes:
Stir in crushed tomatoes and tomato paste. Cook for 2-3 minutes to deepen the flavor.
3. Simmer:
Pour in broth, add sugar, salt, pepper, basil, and red pepper flakes. Bring to a boil,
then reduce heat and simmer uncovered for 15-20 minutes.
4. Blend:
Use an immersion blender right in the pot, or transfer in batches to a blender. Blend until completely smooth.
5. Creamy Finish:
Stir in the cream and warm through (don't boil after adding cream). Adjust seasoning to taste.
6. Serve:
Ladle into bowls and garnish with fresh herbs. Serve with croutons or a melty grilled cheese.
